Mediterranean food is built around the shared table — small plates, warm bread, grilled meat and vegetables, olive oil and smoke. At LAYALI that table starts with the meze platter (S$37.90): hummus, babaganoush, ezme and moutabbal with warm bread. The babaganoush and moutabbal taste smoky because the eggplant is grilled over the same charcoal as the kebabs — not steamed, not boiled.

Turkish cooking is part of the wider Mediterranean table, and at LAYALI they share one kitchen. The Mediterranean side shows up in the meze — hummus, moutabbal, labneh, olives and salads — while the Turkish side brings the charcoal grill: Adana lamb kebab hand-pressed onto skewers, shish, pide from the oven and kunefeh to finish. Most tables order from both.
